One of the garden crews was assigned the adventurous task of harvesting potatoes! First, the students pulled the potato plant – leaves, roots, and all – out of the ground. A few small potatoes were still connected to the plant and easily harvested this way. Then, with gloves on, the students dug around in the surrounding soil to find other hidden potatoes. Lastly, they used a fork to comb through the remaining soil for any other potatoes that had thus far avoided capture.
Yesterday, all three varieties of potatoes (gold, red, and purple) were roasted with fresh herbs and garlic scapes as part of our lunch. Today, they contributed to a thick and flavorful soup. Almost everyone went back for seconds!
